What do with potato peels…

Chicken broth is renown for perking up the body when ill, but did you know that potato peel broth is an even better pick-me-up? Potato peels are full of potassium and balance restoring minerals. Simply boil the peels of 4 large organic potatoes with 4 carrots (sliced) and 4 celery sticks (chunked) and a handful of parsley in 2 litres of water to create a warm drink to sip like tea to revitalise.

Especially perfect for women who have just given birth or anyone recovering from illness.
